1/2 cup dry couscous
1/2 cup water
1 tsp powdered beef stock (or vegetable stock for the meataphobes)
2-3 tbs butter (or olive oil for the vegans)
1 tbs pine nuts
Some kalamata olives if desired, seeded and halved
Salt and pepper to taste
1 tbs red onion chutney for extra flavour
Boil water, stock powder and 1-2 tbs butter/oil. Take off heat, stir through the dry couscous, and sprinkle pine nuts (and olives) on top. Cover for 3 min. Add 1 tbs butter/oil, return to heat, and stir over heat for 3 mins. Season with salt and pepper to taste and serve with a dollop of chutney on top to mix in at leisure as you eat.
Simple, quick, filling. Serve with a sharp drink (dry beer/cider or lemonade/ginger beer). Would work very well with a dollop of apple sauce as well, or with a tomatoey stew.
